Jay is a town in Essex County, New York County, New York, United States. The Town of Jay was formed in 1798 from part of the Willsboro, New York of Willsboro. In 1822, the town was increased by territory from the Chateaugay (town), New York of Chateaugay (now in Clinton County), and the Peru, New York of Peru (now in Franklin County, New York County). Lumber production and iron ore extraction were important to the early econmomy of the town. The population was 2,306 at the 2000 census.
